Fresh whole pieces of uni from Santa Barbara, California have been well marinated with kelp seasoned soy sauce. “Ruibe” is a dish of the Ainu people of northern Japan, consisting of salmon that is frozen outdoors, sliced like sashimi, and served with soy sauce and wasabi.
